Ingredients:

  • 4 ripe peaches, halved and pitted
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp honey
  • 1/2 tsp sea salt
  • 1 tbsp fresh lemon juice
  • 1 sprig fresh thyme
  • 1 cup Greek yogurt

Instructions:

  1. Preheat your oven to 400°F (200°C). Slice the peaches in half along the seam and twist to remove the pits. Place the peaches cut-side up in a rimmed baking dish, ensuring they aren't crowded.
  2. In a small bowl, whisk together the olive oil, honey, and sea salt. Drizzle the mixture evenly over the exposed flesh of the peaches, ensuring the edges are well coated.
  3. Bake on the center rack for 20–25 minutes until the edges are deep golden brown and the center is bubbling. Remove from the oven and immediately drizzle with fresh lemon juice.
  4. Garnish with fresh thyme leaves and serve with a dollop of Greek yogurt or mascarpone cheese if desired.
