Ingredients:
- 6 cups (1.4kg) peeled and sliced apples (mix of Granny Smith and Honeycrisp)
- 1 tbsp (14g) lemon juice
- 3/4 cup (150g) light brown sugar, packed
- 1/4 cup (50g) granulated sugar
- 2 tbsp (16g) cornstarch
- 1 tbsp (8g) ground cinnamon
- 1/2 tsp (2g) ground ginger
- 1/4 tsp (1g) ground nutmeg
- 1 tsp (5ml) vanilla extract
- 2 tbsp (28g) unsalted butter
Instructions:
- Melt the butter over medium heat in a large heavy-bottomed pot or deep skillet.
- Stir in the brown sugar and granulated sugar, whisking constantly for 1–2 minutes until the mixture resembles a bubbling, mahogany-colored syrup.
- Add the sliced apples, lemon juice, cinnamon, ginger, and nutmeg. Stir well to coat every slice.
- Simmer for 8–10 minutes, stirring occasionally, until the apples become translucent and tender but still hold their shape.
- In a small bowl, whisk the cornstarch with 2 tbsp of cold water to create a smooth slurry.
- Pour the slurry into the bubbling apple mixture and stir constantly for 1–2 minutes until the sauce thickens into a glossy glaze.
- Stir in the vanilla extract and remove from heat immediately.
