Ingredients:

  • 6 cups (1.4kg) peeled and sliced apples (mix of Granny Smith and Honeycrisp)
  • 1 tbsp (14g) lemon juice
  • 3/4 cup (150g) light brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 2 tbsp (16g) cornstarch
  • 1 tbsp (8g) ground cinnamon
  • 1/2 tsp (2g) ground ginger
  • 1/4 tsp (1g) ground nutmeg
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (28g) unsalted butter

Instructions:

  1. Melt the butter over medium heat in a large heavy-bottomed pot or deep skillet.
  2. Stir in the brown sugar and granulated sugar, whisking constantly for 1–2 minutes until the mixture resembles a bubbling, mahogany-colored syrup.
  3. Add the sliced apples, lemon juice, cinnamon, ginger, and nutmeg. Stir well to coat every slice.
  4. Simmer for 8–10 minutes, stirring occasionally, until the apples become translucent and tender but still hold their shape.
  5. In a small bowl, whisk the cornstarch with 2 tbsp of cold water to create a smooth slurry.
  6. Pour the slurry into the bubbling apple mixture and stir constantly for 1–2 minutes until the sauce thickens into a glossy glaze.
  7. Stir in the vanilla extract and remove from heat immediately.
