Ingredients:

  • 2 cans (15 oz each) sliced peaches in juice, drained
  • 1/4 cup reserved peach juice
  • 2 tbsp granulated sugar
  • 1/2 tsp ground cinnamon
  • 1 tbsp unsalted butter, melted
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 tsp vanilla extract

Instructions:

  1. Drain the canned peaches using a strainer, reserving 1/4 cup (60ml) of the syrup.
  2. In a 9x13 inch baking dish, toss the sliced peaches with 2 tablespoons of sugar, cinnamon, and melted butter.
  3. Drizzle the reserved peach syrup evenly over the fruit to create the syrupy base.
  4. Preheat the oven to 375°F (190°C) and grease the sides of the baking dish.
  5. Whisk together the flour, 1 cup of sugar, baking powder, and salt in a medium bowl.
  6. In a large bowl, cream the softened butter and eggs together using an electric mixer until the mixture is pale and fluffy.
  7. Slowly incorporate the dry ingredients into the butter mixture, alternating with the whole milk and vanilla extract. Mix until just combined.
  8. Carefully spoon the batter over the peaches in the baking dish and spread evenly with a spatula.
  9. Bake for 45 minutes or until the top is golden brown and the center is set.
