Ingredients:
- 2 cans (15 oz each) sliced peaches in juice, drained
- 1/4 cup reserved peach juice
- 2 tbsp granulated sugar
- 1/2 tsp ground cinnamon
- 1 tbsp unsalted butter, melted
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup whole milk
- 1 tsp vanilla extract
Instructions:
- Drain the canned peaches using a strainer, reserving 1/4 cup (60ml) of the syrup.
- In a 9x13 inch baking dish, toss the sliced peaches with 2 tablespoons of sugar, cinnamon, and melted butter.
- Drizzle the reserved peach syrup evenly over the fruit to create the syrupy base.
- Preheat the oven to 375°F (190°C) and grease the sides of the baking dish.
- Whisk together the flour, 1 cup of sugar, baking powder, and salt in a medium bowl.
- In a large bowl, cream the softened butter and eggs together using an electric mixer until the mixture is pale and fluffy.
- Slowly incorporate the dry ingredients into the butter mixture, alternating with the whole milk and vanilla extract. Mix until just combined.
- Carefully spoon the batter over the peaches in the baking dish and spread evenly with a spatula.
- Bake for 45 minutes or until the top is golden brown and the center is set.
