Ingredients:

  • 1 box (14.1 oz / 400g) refrigerated frozen pie crusts (contains 2 crusts)
  • 2 cans (20 oz / 567g each) apple pie filling
  • 1 tsp (2.6g) ground cinnamon
  • 1/4 tsp (0.5g) ground nutmeg
  • 1 tbsp (15ml) fresh lemon juice
  • 1 large egg (50g), beaten for egg wash
  • 1 tbsp (8g) coarse sugar or turbinado sugar

Instructions:

  1. Unroll one of the frozen pie crusts. Press it firmly into the bottom and up the sides of your 9 inch pie dish, pinching any tears closed.
  2. Pour both cans of apple pie filling into a large mixing bowl.
  3. Stir in the ground cinnamon, ground nutmeg, and lemon juice. Mix gently until the spices are evenly distributed and the syrup looks glossy.
  4. Pour the spiced apple mixture into the prepared crust. Use your spatula to smooth the top.
  5. Lay the second crust over the filling. Trim the excess dough so it doesn't overlap too much.
  6. Pinch the edges of the top and bottom crusts together. Make sure you create a tight seal to keep the juices inside.
  7. Use a knife to poke 4-5 small vents in the center. This lets the steam escape.
  8. Brush the entire top surface with the beaten egg wash. Sprinkle the coarse sugar evenly over the top.
  9. Bake at 425°F (218°C) for 35-45 minutes until the crust is mahogany colored and the filling is bubbling through the vents.
