Ingredients:
- 1 box (14.1 oz / 400g) refrigerated frozen pie crusts (contains 2 crusts)
- 2 cans (20 oz / 567g each) apple pie filling
- 1 tsp (2.6g) ground cinnamon
- 1/4 tsp (0.5g) ground nutmeg
- 1 tbsp (15ml) fresh lemon juice
- 1 large egg (50g), beaten for egg wash
- 1 tbsp (8g) coarse sugar or turbinado sugar
Instructions:
- Unroll one of the frozen pie crusts. Press it firmly into the bottom and up the sides of your 9 inch pie dish, pinching any tears closed.
- Pour both cans of apple pie filling into a large mixing bowl.
- Stir in the ground cinnamon, ground nutmeg, and lemon juice. Mix gently until the spices are evenly distributed and the syrup looks glossy.
- Pour the spiced apple mixture into the prepared crust. Use your spatula to smooth the top.
- Lay the second crust over the filling. Trim the excess dough so it doesn't overlap too much.
- Pinch the edges of the top and bottom crusts together. Make sure you create a tight seal to keep the juices inside.
- Use a knife to poke 4-5 small vents in the center. This lets the steam escape.
- Brush the entire top surface with the beaten egg wash. Sprinkle the coarse sugar evenly over the top.
- Bake at 425°F (218°C) for 35-45 minutes until the crust is mahogany colored and the filling is bubbling through the vents.
