Ingredients:

  • 3 medium zucchini (approx. 680g)
  • 1 tsp kosher salt
  • 2 tbsp extra virgin olive oil
  • 8 oz goat cheese
  • 2 oz cream cheese
  • 2 tbsp fresh chives
  • 1 tsp lemon zest
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper

Instructions:

  1. Use a vegetable peeler to slice the zucchini lengthwise into thin, flexible ribbons, stopping at the seedy core.
  2. Lay zucchini ribbons on a paper towel, sprinkle with salt, let sit for 5 minutes, and pat dry firmly.
  3. Lightly brush each zucchini ribbon with olive oil.
  4. In a small bowl, whip together softened goat cheese and cream cheese until smooth.
  5. Fold in chopped chives, lemon zest, garlic powder, and black pepper until evenly distributed.
  6. Spread approximately 1 tablespoon (15g) of the cheese mixture along one end of a zucchini ribbon.
  7. Roll the zucchini tightly around the cheese and secure the edge with a toothpick.
  8. Place rolls on a parchment-lined baking sheet and bake at 400°F (200°C) for 12–15 minutes until tender with golden charred edges.
