Ingredients:
- 3 medium zucchini (approx. 680g)
- 1 tsp kosher salt
- 2 tbsp extra virgin olive oil
- 8 oz goat cheese
- 2 oz cream cheese
- 2 tbsp fresh chives
- 1 tsp lemon zest
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
Instructions:
- Use a vegetable peeler to slice the zucchini lengthwise into thin, flexible ribbons, stopping at the seedy core.
- Lay zucchini ribbons on a paper towel, sprinkle with salt, let sit for 5 minutes, and pat dry firmly.
- Lightly brush each zucchini ribbon with olive oil.
- In a small bowl, whip together softened goat cheese and cream cheese until smooth.
- Fold in chopped chives, lemon zest, garlic powder, and black pepper until evenly distributed.
- Spread approximately 1 tablespoon (15g) of the cheese mixture along one end of a zucchini ribbon.
- Roll the zucchini tightly around the cheese and secure the edge with a toothpick.
- Place rolls on a parchment-lined baking sheet and bake at 400°F (200°C) for 12–15 minutes until tender with golden charred edges.
