Ingredients:
- 2 cups (280g) zucchini, coarsely grated
- ½ tsp (3g) salt
- 1 large (50g) egg, beaten
- ¼ cup (30g) all-purpose flour
- ¼ cup (25g) Parmesan cheese, finely grated
- 2 scallions (10g), thinly sliced
- 1 clove (3g) garlic, minced
- ¼ tsp (1g) black pepper
- 2 tbsp (28g) olive oil
Instructions:
- Place the grated zucchini in a bowl and toss with the salt. Let it sit for 5–10 minutes to draw out moisture.
- Transfer the zucchini to a kitchen towel or cheesecloth and squeeze firmly until no more liquid drips out.
- In a mixing bowl, combine the squeezed zucchini, beaten egg, flour, Parmesan, scallions, garlic, and pepper. Stir until the batter is chunky but holds together.
- Heat oil in a skillet over medium-high heat until shimmering.
- Scoop about 2 tablespoons of batter per fritter into the pan, flattening slightly with a spatula.
- Fry for 3–4 minutes per side until a mahogany-colored crust forms.
- Transfer to a wire rack to maintain crispness.
