Ingredients:

  • 2 cups (220g) pecan halves
  • 1/2 cup (113g) unsalted butter
  • 1 cup (200g) light brown sugar
  • 1/4 cup (60ml) heavy cream
  • 1 tsp (5ml) vanilla extract
  • 12 oz (340g) white chocolate chips
  • 1 tbsp (14g) coconut oil

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Spread the pecan halves on a baking sheet and toast for 5–7 minutes until they smell nutty and look slightly golden.
  3. Immediately remove from the oven and arrange them in small clusters of 3–4 nuts on a parchment-lined baking sheet, leaving about an inch of space between each cluster.
  4. In a saucepan over medium heat, melt the butter.
  5. Stir in the brown sugar and heavy cream, whisking constantly.
  6. Bring the mixture to a gentle boil; heat until it reaches 240°F (115°C) or simmer for 5–8 minutes until thick and glossy.
  7. Remove from heat and stir in the vanilla extract.
  8. Quickly spoon about 1 teaspoon of caramel over each pecan cluster.
  9. Melt the white chocolate chips and coconut oil using a microwave-safe bowl or double boiler until smooth.
  10. Spoon or drizzle the melted white chocolate over the caramel-topped pecans.
  11. Place the baking sheet in the refrigerator and chill for 30 minutes until the chocolate is fully set.
