Ingredients:
- 1 baguette (approx. 1 lb / 450g), sliced into 1/2-inch rounds
- 3 tbsp extra virgin olive oil
- 3 large peaches (approx. 1.5 lbs / 680g), pitted and sliced into wedges
- 2 tbsp unsalted butter, melted
- 1 tbsp honey
- 10 oz Burrata cheese, room temperature
- 4 oz Prosciutto
- 2 tbsp balsamic glaze
- 1/4 cup fresh basil leaves, chiffonade
Instructions:
- Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet and brush both sides lightly with olive oil.
- Toast baguette slices for 5–8 minutes until golden and firm to the touch. Set aside to cool slightly.
- Whisk melted butter and honey in a small bowl. Brush the peach wedges generously with the mixture.
- Place peaches on a medium-high grill or grill pan. Sear for 2–3 minutes per side until distinct char marks appear and the fruit is slightly softened.
- Spread a generous dollop of burrata onto each toasted baguette slice.
- Top each slice with one warm grilled peach wedge.
- Drape a small ribbon of prosciutto over the peach.
- Finish with a drizzle of balsamic glaze and a sprinkle of fresh basil.
