Ingredients:

  • 1 baguette (approx. 1 lb / 450g), sliced into 1/2-inch rounds
  • 3 tbsp extra virgin olive oil
  • 3 large peaches (approx. 1.5 lbs / 680g), pitted and sliced into wedges
  • 2 tbsp unsalted butter, melted
  • 1 tbsp honey
  • 10 oz Burrata cheese, room temperature
  • 4 oz Prosciutto
  • 2 tbsp balsamic glaze
  • 1/4 cup fresh basil leaves, chiffonade

Instructions:

  1. Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet and brush both sides lightly with olive oil.
  2. Toast baguette slices for 5–8 minutes until golden and firm to the touch. Set aside to cool slightly.
  3. Whisk melted butter and honey in a small bowl. Brush the peach wedges generously with the mixture.
  4. Place peaches on a medium-high grill or grill pan. Sear for 2–3 minutes per side until distinct char marks appear and the fruit is slightly softened.
  5. Spread a generous dollop of burrata onto each toasted baguette slice.
  6. Top each slice with one warm grilled peach wedge.
  7. Drape a small ribbon of prosciutto over the peach.
  8. Finish with a drizzle of balsamic glaze and a sprinkle of fresh basil.
