Ingredients:
- 3 tbsp (42g) unsalted butter
- 3 tbsp (25g) all-purpose flour
- 2 cups (480ml) vegetable broth
- 1 cup (240ml) roasted Hatch green chiles, peeled and puréed
- 1/2 tsp (3g) garlic powder
- 1/2 tsp (3g) ground cumin
- 1 tsp (6g) salt
- 2 cups (300g) gold potatoes, peeled and diced into 1/4 inch cubes
- 1 cup (150g) frozen corn, thawed
- 1 can (15 oz / 425g) black beans, drained and rinsed
- 1 cup (115g) Monterey Jack cheese, shredded
- 2 tbsp (30ml) olive oil
- 1/2 small white onion, finely diced
- 12 (6 inch) corn tortillas
- 2 cups (225g) Monterey Jack or Pepper Jack cheese, shredded
- 1/4 cup (15g) fresh cilantro, chopped
- 2 tbsp (30ml) vegetable oil
Instructions:
- Melt butter in a saucepan over medium heat. Whisk in flour and cook for 2 minutes until the mixture smells nutty and looks pale gold.
- Slowly pour in the vegetable broth while whisking constantly to prevent lumps.
- Stir in the puréed Hatch chiles, garlic powder, cumin, and salt.
- Lower heat and simmer for 10 minutes until the sauce is thick enough to coat the back of a spoon. Remove from heat.
- Heat olive oil in a skillet. Add diced onions and potatoes. Cook until potatoes are golden and tender (about 8–10 minutes).
- Stir in the corn and black beans. Cook for another 3 minutes until heated through.
- Briefly warm corn tortillas in vegetable oil or steam to increase elasticity.
- Fill each tortilla with the potato-bean mixture and a portion of shredded Monterey Jack cheese; roll tightly.
- Place rolled enchiladas in a 9x13 inch baking dish, cover with the remaining green chile sauce and shredded cheese.
- Bake in a preheated oven until the cheese is melted and bubbly.
- Garnish with fresh chopped cilantro before serving.
