Ingredients:
- 1 cup (225g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 tsp (5ml) vanilla extract
- 2 large eggs (approx. 100g)
- 2 cups (250g) all-purpose flour
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1/2 cup (120ml) full-fat milk, room temperature
- 1 lb (450g) fresh plums, pitted and quartered
- 2 tbsp (25g) granulated sugar
- 1 tbsp (15ml) melted butter
Instructions:
- Preheat the oven to 350°F (175°C). Line a 9x13 inch rimmed baking sheet with parchment paper, leaving an overhang on the sides.
- Wash and pat the plums completely dry with paper towels, then quarter them and set aside.
- In a large bowl, beat the softened butter and granulated sugar until the mixture is pale and fluffy, approximately 3 minutes.
- Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the room-temperature milk, mixing on low speed until just combined.
- Pour the batter into the prepared pan and use a rubber spatula to smooth it into an even layer, ensuring it reaches all four corners.
- Press the plum quarters into the batter, distributing them evenly across the surface.
- Sprinkle the top of the fruit with 2 tablespoons of sugar and brush with melted butter.
- Bake for 60 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
