Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 tsp (5ml) vanilla extract
  • 2 large eggs (approx. 100g)
  • 2 cups (250g) all-purpose flour
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1/2 cup (120ml) full-fat milk, room temperature
  • 1 lb (450g) fresh plums, pitted and quartered
  • 2 tbsp (25g) granulated sugar
  • 1 tbsp (15ml) melted butter

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a 9x13 inch rimmed baking sheet with parchment paper, leaving an overhang on the sides.
  2. Wash and pat the plums completely dry with paper towels, then quarter them and set aside.
  3. In a large bowl, beat the softened butter and granulated sugar until the mixture is pale and fluffy, approximately 3 minutes.
  4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  5. Sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the room-temperature milk, mixing on low speed until just combined.
  6. Pour the batter into the prepared pan and use a rubber spatula to smooth it into an even layer, ensuring it reaches all four corners.
  7. Press the plum quarters into the batter, distributing them evenly across the surface.
  8. Sprinkle the top of the fruit with 2 tablespoons of sugar and brush with melted butter.
  9. Bake for 60 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
