Ingredients:

  • 2 lbs fresh ripe plums, pitted and diced
  • 1/2 cup granulated sugar
  • 1 tbsp fresh lemon juice
  • 1 cinnamon stick
  • 1 tsp pure vanilla extract
  • Pinch of salt

Instructions:

  1. Wash the plums thoroughly. Cut them into quarters, remove the pits, and dice the flesh into 1/2-inch (1.25cm) pieces.
  2. Combine the diced plums, sugar, lemon juice, and cinnamon stick in a saucepan over medium heat.
  3. Stir gently as the sugar dissolves and the plums release their natural juices. Once it reaches a gentle simmer, reduce the heat to low.
  4. Cook for 10–15 minutes, stirring occasionally, until the liquid reduces by about a third and the fruit softens but retains some shape.
  5. Remove from heat and stir in the vanilla extract and a pinch of salt. Remove the cinnamon stick before serving.
