Ingredients:

  • 1 cup pomegranate juice, pure and unsweetened
  • 0.5 cup blood orange juice, freshly squeezed
  • 1 tbsp simple syrup
  • 1 tsp fresh lime juice
  • 1 cup Dry Prosecco
  • 2 tbsp pink sanding sugar
  • 0.5 cup fresh raspberries
  • 2 sprigs fresh mint
  • 1 lime wedge

Instructions:

  1. Chill the liquids. Place your pomegranate juice, blood orange juice, and Prosecco in the coldest part of the fridge for at least 1 hour.
  2. Prepare the rims. Run the lime wedge around the top of two glasses, then dip them into the pink sanding sugar until the rim is fully coated and glittering.
  3. Mix the base. In a small pitcher, combine the pomegranate juice, blood orange juice, simple syrup, and lime juice.
  4. Stir gently. Use your long spoon to incorporate the syrup until no streaks of sugar remain in the juice.
  5. Let it rest. Place the juice mixture in the fridge for 30 minutes. until the flavors are velvety and integrated.
  6. Add the fruit. Drop a few fresh raspberries into the bottom of each sugar rimmed glass.
  7. The first pour. Fill each glass halfway with the chilled juice mixture.
  8. The grand pour. Top each glass with the Dry Prosecco until the foam reaches the sugar rim.
  9. Garnish. Finish with a sprig of fresh mint and a few more raspberries.
  10. Serve immediately. Hand the glass to your partner while the bubbles are still shattering on the surface.
