Ingredients:

  • 6 cups (900g) fresh peaches, peeled and sliced
  • ¾ cup (150g) granulated sugar
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (2g) ground cinnamon
  • ¼ tsp (1.5g) salt
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • ½ tsp (3g) salt
  • 1 cup (240ml) whole milk
  • ½ cup (113g) unsalted butter, melted
  • 1 tbsp (12g) granulated sugar
  • ½ tsp (1g) ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss the sliced peaches with the sugar, lemon juice, cinnamon, and salt.
  3. Let the mixture sit for 10 minutes to allow the juices to release. Use a fork to lightly press a few peach slices to create a thicker syrup.
  4. Pour the peach mixture into the baking dish, spreading them evenly to the edges.
  5. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  6. Stir in the milk until just combined; do not overmix.
  7. Pour the melted butter directly into the bottom of the baking dish before the peaches or drizzle it over the fruit.
  8. Spoon the batter over the peaches in dollops, leaving a small border of fruit visible around the edges.
  9. Mix the finishing cinnamon and sugar and sprinkle evenly over the top of the batter.
  10. Bake for 40–45 minutes until the topping is golden brown.
