Ingredients:
- 6 cups (900g) fresh peaches, peeled and sliced
- ¾ cup (150g) granulated sugar
- 1 tbsp (15ml) lemon juice
- 1 tsp (2g) ground cinnamon
- ¼ tsp (1.5g) salt
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- ½ tsp (3g) salt
- 1 cup (240ml) whole milk
- ½ cup (113g) unsalted butter, melted
- 1 tbsp (12g) granulated sugar
- ½ tsp (1g) ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, toss the sliced peaches with the sugar, lemon juice, cinnamon, and salt.
- Let the mixture sit for 10 minutes to allow the juices to release. Use a fork to lightly press a few peach slices to create a thicker syrup.
- Pour the peach mixture into the baking dish, spreading them evenly to the edges.
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Stir in the milk until just combined; do not overmix.
- Pour the melted butter directly into the bottom of the baking dish before the peaches or drizzle it over the fruit.
- Spoon the batter over the peaches in dollops, leaving a small border of fruit visible around the edges.
- Mix the finishing cinnamon and sugar and sprinkle evenly over the top of the batter.
- Bake for 40–45 minutes until the topping is golden brown.
