Ingredients:
- 1 lb ground beef (80/20 or 85/15)
- 1 tbsp olive oil
- 1/2 cup water or beef broth
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 corn tortillas
- 2 cups shredded iceberg lettuce
- 1 cup shredded cheddar cheese
- 1 medium tomato, diced
- 1/2 cup sour cream
Instructions:
- In a small bowl, whisk together the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the ground beef in an even layer and let it sear undisturbed for about 4 minutes until a deep brown crust forms. Break the meat apart with a spatula and cook until no pink remains.
- Sprinkle the spice blend over the beef and stir for 1 minute. Pour in the water or beef broth, lower the heat to medium-low, and simmer for 3-5 minutes until the liquid reduces into a glossy glaze.
- Warm the tortillas in a dry pan for 30 seconds per side or in the microwave for 30 seconds. Spoon the beef into the shells and add lettuce, cheese, diced tomato, and sour cream.
