Ingredients:

  • 2 Large English Cucumbers (approx. 700g), thinly sliced
  • 1/2 Medium Red Onion (approx. 100g), shaved into translucent half-moons
  • 1/2 cup Fresh Dill, stems removed and roughly chopped
  • 1/4 cup Apple Cider Vinegar
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Granulated Sugar
  • 1 tsp Sea Salt
  • 1/2 tsp Freshly cracked black pepper
  • 1 clove garlic, minced fine

Instructions:

  1. Wash 2 English Cucumbers and slice them into 2mm disks.
  2. Slice 1/2 medium red onion into translucent half moons.
  3. Mince 1 clove of garlic until it's almost a paste.
  4. Combine 1/4 cup apple cider vinegar, 2 tbsp olive oil, 1 tbsp sugar, 1 tsp salt, and 1/2 tsp pepper in a small bowl.
  5. Whisk until the sugar and salt are no longer visible at the bottom of the bowl.
  6. Place cucumbers and onions in the large glass bowl and pour the dressing over them.
  7. Fold in 1/2 cup of freshly chopped dill.
  8. Cover and refrigerate for at least 15 minutes.
  9. Give it one last toss until the cucumbers look glossy and coated.
  10. Serve immediately. Drain any excess pooling liquid if you prefer a drier salad.
