Ingredients:
- 2 cups (240g) powdered sugar, sifted
- 2 tbsp (30ml) light corn syrup
- 1 tbsp (15ml) melted unsalted butter
- 1 tsp (5ml) peppermint extract
- 1/2 tsp (3g) fine sea salt
- 1 tsp (6g) flaky sea salt
- 2 tbsp (16g) cornstarch
Instructions:
- Combine the sifted powdered sugar and fine sea salt in a medium mixing bowl.
- Stir in the melted butter, corn syrup, and peppermint extract using a spatula until the mixture forms a thick, cohesive paste.
- Dust a clean workspace or parchment paper with cornstarch and turn out the dough.
- Gently knead the dough for 1-2 minutes until it reaches a smooth, matte finish and no longer sticks to your fingers.
- Roll the dough into cylinders approximately 1/2 inch in diameter and slice into discs roughly 1/4 inch thick.
- Place discs on a parchment-lined baking sheet and press one or two grains of flaky sea salt onto the top of each candy.
- Allow candies to chill for 3 hours and 20 minutes to firm up completely before storing.
