Ingredients:
- 1.5 lbs firm-ripe plums, halved and pitted
- 2 tbsp extra virgin olive oil
- 2 tbsp honey
- 1 tbsp balsamic vinegar
- 1 tsp flaky sea salt
- 1/2 tsp black pepper
- 1 tsp fresh thyme leaves
- 1/4 tsp red pepper flakes
Instructions:
- Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper.
- Place the plum halves cut-side up on the sheet, leaving about an inch of space between each half for air circulation.
- In a small bowl, whisk together the honey, balsamic vinegar, salt, pepper, thyme, and red pepper flakes until emulsified.
- Drizzle olive oil over the plums, then generously spoon the savory glaze over each half, ensuring the cut surface is well-coated.
- Roast in the center rack of the oven for 15–20 minutes until skins begin blistering and juices bubble into a thick syrup.
- Remove from the oven and let the plums rest for 5 minutes before serving.
