Ingredients:
- 1 lb fresh red plums, pitted and chopped
- 1/2 cup yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/4 cup apple cider vinegar
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1/4 tsp kosher salt
- 3 tbsp maple syrup
Instructions:
- Heat the olive oil in a saucepan over medium heat. Add the diced onion and cook for 3-5 minutes until translucent.
- Stir in the minced garlic and grated ginger, cooking for 60 seconds until fragrant but not browned.
- Combine the chopped plums, apple cider vinegar, soy sauce, and maple syrup in a blender. Process until completely smooth.
- Pour the plum puree into the saucepan with the sautéed aromatics and bring to a gentle simmer over medium-low heat.
- Simmer for 10-12 minutes, stirring occasionally, until the sauce reaches a mahogany color and a thick, glossy consistency.
- Remove from heat and stir in the kosher salt.
