Ingredients:

  • 1 lb fresh red plums, pitted and chopped
  • 1/2 cup yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup apple cider vinegar
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1/4 tsp kosher salt
  • 3 tbsp maple syrup

Instructions:

  1. Heat the olive oil in a saucepan over medium heat. Add the diced onion and cook for 3-5 minutes until translucent.
  2. Stir in the minced garlic and grated ginger, cooking for 60 seconds until fragrant but not browned.
  3. Combine the chopped plums, apple cider vinegar, soy sauce, and maple syrup in a blender. Process until completely smooth.
  4. Pour the plum puree into the saucepan with the sautéed aromatics and bring to a gentle simmer over medium-low heat.
  5. Simmer for 10-12 minutes, stirring occasionally, until the sauce reaches a mahogany color and a thick, glossy consistency.
  6. Remove from heat and stir in the kosher salt.
