Ingredients:
- 3 medium zucchini (approx 1.5 lbs / 680g), sliced into 1/4-inch rounds
- 1 tbsp (15ml) extra virgin olive oil
- ½ tsp (3g) sea salt
- ¼ tsp (1g) cracked black pepper
- ½ tsp (2g) garlic powder
- ¼ cup (25g) finely grated Parmesan cheese
- ¼ tsp (0.5g) dried oregano or Italian seasoning
Instructions:
- Preheat your oven to 425°F (218°C). In a large bowl, toss the zucchini rounds with olive oil, salt, pepper, and garlic powder until lightly coated.
- Line a large rimmed baking sheet with parchment paper. Arrange the zucchini slices in a single layer, leaving about a half-inch of space between each piece. Bake for 8–10 minutes until the edges just begin to soften.
- Remove the pan from the oven and evenly sprinkle the finely grated Parmesan cheese and dried oregano across the tops of the slices.
- Turn the oven to 'Broil' (High). Return the pan to the top rack for 2–3 minutes until the cheese is bubbling and mahogany-colored and the zucchini edges are crisp.
