Ingredients:

  • 3 medium zucchini (approx 1.5 lbs / 680g), sliced into 1/4-inch rounds
  • 1 tbsp (15ml) extra virgin olive oil
  • ½ tsp (3g) sea salt
  • ¼ tsp (1g) cracked black pepper
  • ½ tsp (2g) garlic powder
  • ¼ cup (25g) finely grated Parmesan cheese
  • ¼ tsp (0.5g) dried oregano or Italian seasoning

Instructions:

  1. Preheat your oven to 425°F (218°C). In a large bowl, toss the zucchini rounds with olive oil, salt, pepper, and garlic powder until lightly coated.
  2. Line a large rimmed baking sheet with parchment paper. Arrange the zucchini slices in a single layer, leaving about a half-inch of space between each piece. Bake for 8–10 minutes until the edges just begin to soften.
  3. Remove the pan from the oven and evenly sprinkle the finely grated Parmesan cheese and dried oregano across the tops of the slices.
  4. Turn the oven to 'Broil' (High). Return the pan to the top rack for 2–3 minutes until the cheese is bubbling and mahogany-colored and the zucchini edges are crisp.
