Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 3.4 oz instant vanilla pudding mix
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup rainbow sprinkles
  • 2 tbsp rainbow sprinkles

Instructions:

  1. Cream the softened butter and sugar together on medium-high speed until the color turns pale ivory and the texture is fluffy.
  2. Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and instant pudding mix.
  4. Gradually add the dry mixture to the wet ingredients on low speed, mixing only until no more streaks of white flour are visible.
  5. Gently fold in the 3/4 cup of rainbow sprinkles using a spatula.
  6. Scoop rounded tablespoons of dough onto lined baking sheets, spacing them 2 inches apart.
  7. Press the top of each dough ball into a bowl of extra sprinkles.
  8. Bake at 350°F (175°C) for 9–11 minutes until edges are barely set but centers remain soft.
