Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 3.4 oz instant vanilla pudding mix
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup rainbow sprinkles
- 2 tbsp rainbow sprinkles
Instructions:
- Cream the softened butter and sugar together on medium-high speed until the color turns pale ivory and the texture is fluffy.
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, salt, and instant pudding mix.
- Gradually add the dry mixture to the wet ingredients on low speed, mixing only until no more streaks of white flour are visible.
- Gently fold in the 3/4 cup of rainbow sprinkles using a spatula.
- Scoop rounded tablespoons of dough onto lined baking sheets, spacing them 2 inches apart.
- Press the top of each dough ball into a bowl of extra sprinkles.
- Bake at 350°F (175°C) for 9–11 minutes until edges are barely set but centers remain soft.
