Ingredients:

  • 24 oz frozen or canned peaches (drained)
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp ground cinnamon
  • 1/4 cup brown sugar
  • 1 cup old fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup chilled and cubed unsalted butter
  • 1/4 tsp salt

Instructions:

  1. Combine the peaches, cornstarch, lemon juice, cinnamon, and brown sugar in an 8x8 inch baking dish.
  2. Toss gently until the peaches are evenly coated and the mixture looks glossy, then spread the fruit into an even layer.
  3. In a medium mixing bowl, whisk together the oats, flour, brown sugar, and salt.
  4. Cut the chilled cubed butter into the dry ingredients using a fork, pressing with fingers until pea-sized clumps form.
  5. Scatter the topping evenly over the peach base, leaving a small amount of fruit visible around the edges.
  6. Preheat oven to 375°F (190°C) and bake for 35–40 minutes until the topping is a deep mahogany brown.
