- 24 oz frozen or canned peaches (drained)
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- 1/2 tsp ground cinnamon
- 1/4 cup brown sugar
- 1 cup old fashioned rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup chilled and cubed unsalted butter
- 1/4 tsp salt
Instructions:
- Combine the peaches, cornstarch, lemon juice, cinnamon, and brown sugar in an 8x8 inch baking dish.
- Toss gently until the peaches are evenly coated and the mixture looks glossy, then spread the fruit into an even layer.
- In a medium mixing bowl, whisk together the oats, flour, brown sugar, and salt.
- Cut the chilled cubed butter into the dry ingredients using a fork, pressing with fingers until pea-sized clumps form.
- Scatter the topping evenly over the peach base, leaving a small amount of fruit visible around the edges.
- Preheat oven to 375°F (190°C) and bake for 35–40 minutes until the topping is a deep mahogany brown.
