Ingredients:
- 1.5 cups all-purpose flour
- 0.75 cup granulated sugar
- 1 tsp baking soda
- 0.5 tsp salt
- 1 tsp ground cinnamon
- 0.5 tsp ground nutmeg
- 0.25 tsp ground allspice
- 0.5 cup unsalted butter, softened
- 2 large eggs
- 0.5 cup full-fat sour cream
- 1 tsp pure vanilla extract
- 12 oz plums, pitted and sliced into thin wedges
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper, leaving an overhang on the sides.
- Whisk together the flour, sugar, baking soda, salt, and spices in a medium bowl until no clumps remain.
- In a large bowl, cream the softened butter and sugar using an electric mixer until the mixture is pale and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Fold in the sour cream until the batter is smooth and glossy.
- Gradually add the dry ingredients, mixing on low speed just until combined; stop as soon as the flour streaks disappear.
- Pour the batter into the prepared pan and smooth the top.
- Press the plum wedges into the surface of the batter in an overlapping pattern.
- Bake for 45–50 minutes. Use a toothpick to test the center; it should come out clean or with a few moist crumbs.
- Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack.
