Ingredients:

  • 4 cups (600g) fresh plums, pitted and sliced into eighths
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (8g) cornstarch
  • 1 cup (120g) all-purpose flour
  • 1 cup (90g) rolled oats
  • 3/4 cup (150g) brown sugar, packed
  • 1/2 tsp (3g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (113g) unsalted butter, cold and cubed

Instructions:

  1. Toss the sliced plums, granulated sugar, lemon juice, cinnamon, and cornstarch in a large bowl.
  2. Let the mixture sit for 10 minutes until the plums release their juices and the mixture looks glossy and jammy.
  3. Pour the fruit into a 9x9 inch baking dish, spreading them evenly.
  4. In a clean bowl, whisk together the flour, oats, brown sugar, baking powder, and salt.
  5. Add the cold, cubed butter and use a pastry cutter or fingertips to work it into the dry ingredients until the mixture resembles coarse crumbs with pea-sized pieces.
  6. Sprinkle the topping evenly over the plums, pressing down very lightly.
  7. Preheat oven to 375°F (190°C) and bake for 40–45 minutes until the filling is bubbling and the topping is mahogany-gold.
  8. Remove from oven and let rest for 15 minutes to allow the sauce to set.
