Ingredients:
- 1.5 cups (340g) very overripe bananas, mashed
- 0.5 cup (113g) unsalted butter, melted and slightly cooled
- 0.5 cup (100g) granulated white sugar
- 0.25 cup (50g) light brown sugar, packed
- 1 large egg, room temperature
- 1 tsp (5ml) pure vanilla extract
- 1.5 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 0.5 tsp (3g) fine sea salt
- 1 tsp ground cinnamon
- 0.5 cup (60g) chopped walnuts or pecans (optional)
- 0.5 cup (90g) semi-sweet chocolate chips (optional)
Instructions:
- Preheat your oven to 375°F (190°C). In a large bowl, mash the bananas until they reach a thick liquid consistency with only a few small lumps remaining.
- Stir the melted butter into the mashed bananas. Add the granulated sugar, brown sugar, egg, and vanilla. Whisk by hand until the mixture looks glossy and the egg is fully incorporated.
- In a separate medium bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and cinnamon.
- Gently fold the dry ingredients into the wet mixture using a spatula. Stop the moment you see no more streaks of dry flour; the batter should be thick and slightly lumpy.
- Divide the batter evenly among a 12-cup standard muffin tin lined with paper liners.
- Bake for 20 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
