Ingredients:

  • 2 lbs Granny Smith apples, peeled, cored, and diced
  • 2 lbs Honeycrisp or Gala apples, peeled, cored, and diced
  • 1/2 cup water
  • 1/3 cup pure Grade A maple syrup
  • 1 tbsp fresh lemon juice
  • 1 tsp ground cinnamon
  • 1/4 tsp fine sea salt

Instructions:

  1. Peel, core, and dice all apples into uniform 1/2-inch cubes. Place them in a large heavy-bottomed pot along with the water, lemon juice, cinnamon, and salt.
  2. Cover the pot and bring to a simmer over medium heat. Once bubbling, reduce heat to low and simmer for 15–20 minutes, stirring occasionally, until the apples are tender.
  3. Remove the pot from heat. While the apples are still steaming, stir in the pure maple syrup.
  4. Use a potato masher for a chunky, rustic texture, or an immersion blender for a velvety, smooth puree. Stir vigorously to ensure the maple syrup is fully emulsified.
