Ingredients:
- 2 lbs Granny Smith apples, peeled, cored, and diced
- 2 lbs Honeycrisp or Gala apples, peeled, cored, and diced
- 1/2 cup water
- 1/3 cup pure Grade A maple syrup
- 1 tbsp fresh lemon juice
- 1 tsp ground cinnamon
- 1/4 tsp fine sea salt
Instructions:
- Peel, core, and dice all apples into uniform 1/2-inch cubes. Place them in a large heavy-bottomed pot along with the water, lemon juice, cinnamon, and salt.
- Cover the pot and bring to a simmer over medium heat. Once bubbling, reduce heat to low and simmer for 15–20 minutes, stirring occasionally, until the apples are tender.
- Remove the pot from heat. While the apples are still steaming, stir in the pure maple syrup.
- Use a potato masher for a chunky, rustic texture, or an immersion blender for a velvety, smooth puree. Stir vigorously to ensure the maple syrup is fully emulsified.
