Ingredients:
- 2 large ripe mangoes (approximately 450g flesh)
- 500ml filtered water
- 120ml freshly squeezed lemon juice
- 1 tsp lemon zest
- 70ml agave nectar or liquid sweetener
- 1 pinch sea salt
- 4 fresh mint leaves for garnish
Instructions:
- Peel and dice the mangoes, discarding the pits. Place the mango flesh into a high-speed blender with 250ml of the filtered water.
- Blend on high speed for 60 seconds until the mixture is fully emulsified and reaches a thick, cloud-like consistency with no visible chunks.
- Add the lemon juice, lemon zest, liquid sweetener, and a pinch of salt to the blender. Pulse for 10 seconds to incorporate the flavors and macerate the zest.
- Pour the mixture through a fine-mesh sieve or nut milk bag into a pitcher to remove insoluble fibers, ensuring a silky mouthfeel.
- Stir in the remaining 250ml of filtered water. Serve immediately over ice and garnish with fresh mint leaves.
