Ingredients:
- 1 lb lean ground beef
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- ½ tsp salt
- ¼ tsp cracked black pepper
- 1 tbsp olive oil
- 3 medium zucchinis, sliced into ¼ inch rounds
- ¼ cup heavy cream
- 1 tsp onion powder
- 1 ½ cups shredded sharp cheddar cheese
- ½ cup grated Parmesan cheese
- ¼ cup fresh parsley, chopped
Instructions:
- Heat olive oil in a skillet over medium-high heat. Add the ground beef and diced onion, cooking until the beef is browned and the onions are translucent.
- Stir in the minced garlic, smoked paprika, salt, and pepper; cook for another 2 minutes until the meat has a deep mahogany hue.
- In a separate mixing bowl, toss the sliced zucchini with heavy cream and onion powder until every slice is thinly coated.
- Spread the browned beef mixture evenly across the bottom of a 9x9 inch baking dish.
- Layer the creamed zucchini slices on top of the beef in an overlapping shingle pattern.
- Cover the top with shredded cheddar and Parmesan cheese.
- Bake at 400°F (200°C) for 25-30 minutes until the cheese is golden and bubbly.
- Garnish with chopped fresh parsley before serving.
