Ingredients:

  • 1 lb lean ground beef
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp cracked black pepper
  • 1 tbsp olive oil
  • 3 medium zucchinis, sliced into ¼ inch rounds
  • ¼ cup heavy cream
  • 1 tsp onion powder
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh parsley, chopped

Instructions:

  1. Heat olive oil in a skillet over medium-high heat. Add the ground beef and diced onion, cooking until the beef is browned and the onions are translucent.
  2. Stir in the minced garlic, smoked paprika, salt, and pepper; cook for another 2 minutes until the meat has a deep mahogany hue.
  3. In a separate mixing bowl, toss the sliced zucchini with heavy cream and onion powder until every slice is thinly coated.
  4. Spread the browned beef mixture evenly across the bottom of a 9x9 inch baking dish.
  5. Layer the creamed zucchini slices on top of the beef in an overlapping shingle pattern.
  6. Cover the top with shredded cheddar and Parmesan cheese.
  7. Bake at 400°F (200°C) for 25-30 minutes until the cheese is golden and bubbly.
  8. Garnish with chopped fresh parsley before serving.
