Ingredients:

  • 1 lb ground turkey
  • 1 cup sliced button mushrooms
  • 1/2 cup diced green bell pepper
  • 2 cloves minced garlic
  • 1 cup low-sugar marinara sauce
  • 1/4 cup grated parmesan cheese
  • 1 tsp dried oregano
  • 2 cups shredded low-moisture mozzarella
  • 1/4 cup fresh basil leaves

Instructions:

  1. Heat the skillet over medium-high heat. Add the ground turkey, breaking it apart with a spatula until it reaches a deep brown color.
  2. Stir in the garlic, mushrooms, and peppers, sautéing for 3–4 minutes until the vegetables soften and edges begin to caramelize.
  3. Lower the heat to medium. Pour in the low-sugar marinara and oregano, stirring constantly for 2 minutes until the sauce thickens.
  4. Stir in the parmesan cheese until fully melted.
  5. Divide the mixture evenly among four oven-safe ramekins.
  6. Top each bowl with a generous layer of shredded mozzarella.
  7. Place the ramekins under the oven broiler for 2–3 minutes until the cheese is bubbling and develops mahogany-colored spots.
  8. Garnish with fresh basil leaves and optional red pepper flakes.
