Ingredients:

  • 2 lbs black plums, pitted and quartered
  • 1 medium onion, finely diced
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 3/4 cup brown sugar
  • 1/2 cup apple cider vinegar
  • 1 tsp lime zest
  • 1 cinnamon stick
  • 4 whole cloves
  • 1 star anise
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp sea salt

Instructions:

  1. Sauté the diced onion in a medium-sized heavy-bottomed saucepan over medium heat until translucent.
  2. Add the minced ginger and garlic, stirring for 60 seconds until fragrant but not browned.
  3. Stir in the quartered plums, brown sugar, apple cider vinegar, cinnamon stick, cloves, and star anise until the fruit is well coated.
  4. Bring the mixture to a gentle boil, then reduce heat to medium-low.
  5. Stir in the red chili powder, turmeric, and salt. Simmer uncovered, stirring occasionally, for 15–20 minutes until the plums soften and the liquid reduces into a thick, glossy syrup.
  6. Stir in the lime zest just before removing from heat.
