Ingredients:
- 2 lbs black plums, pitted and quartered
- 1 medium onion, finely diced
- 1 tbsp fresh ginger, minced
- 3 cloves garlic, minced
- 3/4 cup brown sugar
- 1/2 cup apple cider vinegar
- 1 tsp lime zest
- 1 cinnamon stick
- 4 whole cloves
- 1 star anise
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp sea salt
Instructions:
- Sauté the diced onion in a medium-sized heavy-bottomed saucepan over medium heat until translucent.
- Add the minced ginger and garlic, stirring for 60 seconds until fragrant but not browned.
- Stir in the quartered plums, brown sugar, apple cider vinegar, cinnamon stick, cloves, and star anise until the fruit is well coated.
- Bring the mixture to a gentle boil, then reduce heat to medium-low.
- Stir in the red chili powder, turmeric, and salt. Simmer uncovered, stirring occasionally, for 15–20 minutes until the plums soften and the liquid reduces into a thick, glossy syrup.
- Stir in the lime zest just before removing from heat.
