Ingredients:

  • 2 cups (400g) granulated sugar
  • ½ cup (120ml) light corn syrup
  • ½ cup (120ml) water
  • 2 cups (310g) salted roasted peanuts
  • 4 tbsp (57g) unsalted butter, cubed
  • 1 tsp (5g) baking soda
  • 1 tbsp (15ml) pure vanilla extract

Instructions:

  1. Line a large baking sheet with parchment paper or a silicone mat and measure all ingredients into separate bowls.
  2. Combine sugar, corn syrup, and water in a heavy-bottomed saucepan. Stir over medium heat until the sugar dissolves.
  3. Increase heat to medium-high and cook without stirring until the mixture reaches 300°F (149°C), the hard-crack stage.
  4. Immediately stir in the roasted peanuts and cubed butter. Continue stirring constantly for 2–3 minutes until the butter emulsifies and a mahogany gloss forms.
  5. Remove the pan from the heat. Quickly whisk in the baking soda and vanilla extract, stirring vigorously for 10 seconds until the mixture foams.
  6. Immediately pour the foaming mixture onto the prepared baking sheet and spread evenly.
