Ingredients:
- 2 cups (400g) granulated sugar
- ½ cup (120ml) light corn syrup
- ½ cup (120ml) water
- 2 cups (310g) salted roasted peanuts
- 4 tbsp (57g) unsalted butter, cubed
- 1 tsp (5g) baking soda
- 1 tbsp (15ml) pure vanilla extract
Instructions:
- Line a large baking sheet with parchment paper or a silicone mat and measure all ingredients into separate bowls.
- Combine sugar, corn syrup, and water in a heavy-bottomed saucepan. Stir over medium heat until the sugar dissolves.
- Increase heat to medium-high and cook without stirring until the mixture reaches 300°F (149°C), the hard-crack stage.
- Immediately stir in the roasted peanuts and cubed butter. Continue stirring constantly for 2–3 minutes until the butter emulsifies and a mahogany gloss forms.
- Remove the pan from the heat. Quickly whisk in the baking soda and vanilla extract, stirring vigorously for 10 seconds until the mixture foams.
- Immediately pour the foaming mixture onto the prepared baking sheet and spread evenly.
