Ingredients:

  • 6 cups fresh peaches, peeled and sliced
  • 3/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup whole milk
  • 1 tsp vanilla extract

Instructions:

  1. In a medium bowl, toss the sliced peaches with granulated sugar, lemon juice, cinnamon, cornstarch, and salt.
  2. Allow the peach mixture to sit for 10 minutes to release natural juices and create a thick syrup.
  3. Pour the peach mixture into a 9x9 inch baking dish or cast iron skillet, spreading the fruit evenly.
  4. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  5. Stir in the melted butter, milk, and vanilla extract using a spatula until just combined; the batter should remain lumpy.
  6. Spoon the batter over the peaches in dollops, leaving some fruit exposed around the edges.
  7. Bake at 375°F (190°C) for 40–45 minutes until the topping is deep golden brown and juices are bubbling.
