Ingredients:
- 6 cups fresh peaches, peeled and sliced
- 3/4 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 2 tbsp cornstarch
- 1/4 tsp salt
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 3/4 cup whole milk
- 1 tsp vanilla extract
Instructions:
- In a medium bowl, toss the sliced peaches with granulated sugar, lemon juice, cinnamon, cornstarch, and salt.
- Allow the peach mixture to sit for 10 minutes to release natural juices and create a thick syrup.
- Pour the peach mixture into a 9x9 inch baking dish or cast iron skillet, spreading the fruit evenly.
- Whisk together the flour, sugar, baking powder, and salt in a large bowl.
- Stir in the melted butter, milk, and vanilla extract using a spatula until just combined; the batter should remain lumpy.
- Spoon the batter over the peaches in dollops, leaving some fruit exposed around the edges.
- Bake at 375°F (190°C) for 40–45 minutes until the topping is deep golden brown and juices are bubbling.
