Ingredients:
- 1 cup (200g) granulated white sugar
- 1/4 cup (85g) honey
- 2 tbsp (30ml) water
- 1 tbsp (15ml) light corn syrup
- 1 1/2 tsp (7g) baking soda
Instructions:
- Line a baking sheet with parchment paper and measure out the baking soda into a small bowl.
- Combine the sugar, honey, water, and corn syrup in a deep saucepan or Dutch oven. Stir over medium heat until the sugar dissolves.
- Once the mixture begins to bubble, stop stirring. Attach a candy thermometer and boil until the syrup reaches 300°F (150°C).
- Remove the pot from the heat immediately and quickly whisk in the baking soda for 3-5 seconds until the mixture erupts into a pale, bubbling foam.
- Immediately pour the foaming mixture onto the prepared baking sheet. Do not spread with a spatula to avoid crushing the air bubbles.
- Let the candy cool completely at room temperature for 30-60 minutes until hard and brittle.
