Ingredients:

  • 1 cup (200g) granulated white sugar
  • 1/4 cup (85g) honey
  • 2 tbsp (30ml) water
  • 1 tbsp (15ml) light corn syrup
  • 1 1/2 tsp (7g) baking soda

Instructions:

  1. Line a baking sheet with parchment paper and measure out the baking soda into a small bowl.
  2. Combine the sugar, honey, water, and corn syrup in a deep saucepan or Dutch oven. Stir over medium heat until the sugar dissolves.
  3. Once the mixture begins to bubble, stop stirring. Attach a candy thermometer and boil until the syrup reaches 300°F (150°C).
  4. Remove the pot from the heat immediately and quickly whisk in the baking soda for 3-5 seconds until the mixture erupts into a pale, bubbling foam.
  5. Immediately pour the foaming mixture onto the prepared baking sheet. Do not spread with a spatula to avoid crushing the air bubbles.
  6. Let the candy cool completely at room temperature for 30-60 minutes until hard and brittle.
