Ingredients:

  • 3 lbs apples (mix of Fuji and Granny Smith)
  • 1/2 cup water
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1/8 tsp fine sea salt

Instructions:

  1. Peel, core, and dice the apples into uniform 1-inch cubes.
  2. Place the diced apples, water, cinnamon, and salt into a large heavy-bottomed pot.
  3. Turn the heat to medium-high until the liquid reaches a gentle boil.
  4. Reduce heat to low, cover with a lid, and simmer for 15–20 minutes until apples are translucent and slide apart easily.
  5. Stir in the lemon juice to balance the sugars and prevent oxidation.
  6. Use a potato masher for a chunky texture or an immersion blender for a velvety, smooth consistency.
  7. Let the sauce sit for 10 minutes to allow flavors to meld and consistency to thicken.
