Ingredients:
- 3 lbs apples (mix of Fuji and Granny Smith)
- 1/2 cup water
- 1 tsp ground cinnamon
- 1 tbsp lemon juice
- 1/8 tsp fine sea salt
Instructions:
- Peel, core, and dice the apples into uniform 1-inch cubes.
- Place the diced apples, water, cinnamon, and salt into a large heavy-bottomed pot.
- Turn the heat to medium-high until the liquid reaches a gentle boil.
- Reduce heat to low, cover with a lid, and simmer for 15–20 minutes until apples are translucent and slide apart easily.
- Stir in the lemon juice to balance the sugars and prevent oxidation.
- Use a potato masher for a chunky texture or an immersion blender for a velvety, smooth consistency.
- Let the sauce sit for 10 minutes to allow flavors to meld and consistency to thicken.
