Ingredients:

  • 1 lb Ground Chicken (mix of breast and thigh)
  • 1 Large Egg, beaten
  • 1/2 cup Panko Breadcrumbs
  • 2 cloves Garlic, minced
  • 1 tbsp Fresh Parsley, finely chopped
  • 1 tsp Kosher Salt
  • 1/2 tsp Cracked Black Pepper
  • 1/2 tsp Onion Powder
  • 2 tbsp Olive Oil

Instructions:

  1. In a large chilled bowl, combine the ground chicken, beaten egg, panko breadcrumbs, minced garlic, parsley, salt, pepper, and onion powder. Using a fork, gently fold the ingredients until just combined, being careful not to overmix.
  2. Divide the mixture into 8 equal portions. Lightly oil your hands and shape them into 1/2-inch thick discs. Use your thumb to create a slight indentation in the center of each patty to prevent doming.
  3. Heat olive oil in a heavy-bottomed skillet over medium-high heat until it shimmers. Place the patties in the pan, leaving space between them. Sear for 4–5 minutes per side without pressing down on them.
  4. Cook until the internal temperature reaches 165°F (74°C) as measured by a digital meat thermometer. Remove from heat and serve immediately.
