Ingredients:

  • 1/2 cup (45g) old fashioned rolled oats
  • 1 tbsp (12g) chia seeds
  • 2/3 cup (160ml) unsweetened soy milk
  • 1 scoop (30g) vanilla whey protein powder
  • 1/3 cup (85g) non-fat plain Greek yogurt
  • 1 tbsp (16g) natural peanut butter
  • 1 tsp (5g) maple syrup
  • 1 pinch sea salt

Instructions:

  1. Pour the soy milk into your clean 16oz mason jar.
  2. Add the vanilla whey protein powder to the milk.
  3. Shake or whisk vigorously for 30 seconds until the powder is fully dissolved and the milk is frothy.
  4. Stir in the Greek yogurt, maple syrup, and sea salt until the mixture looks smooth and pale.
  5. Add the natural peanut butter but don't over mix it if you want little pockets of nutty flavor.
  6. Tip in the old fashioned oats and the chia seeds last.
  7. Submerge the dry ingredients using a spoon, ensuring every oat is coated in the liquid.
  8. Seal the jar tightly and give it one final, gentle shake to distribute the chia seeds.
  9. Refrigerate for at least 6 hours or up to 4 days. Wait until the oats are soft and the liquid is gone.
  10. Stir before eating and add a splash of extra milk if it's too thick for your liking.
