Ingredients:

  • 2 cups (220g) grated zucchini, squeezed dry
  • 1/2 cup (120ml) unsweetened applesauce
  • 1/2 cup (120ml) maple syrup
  • 2 large eggs (100g)
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) oat flour
  • 1 tsp (5g) baking soda
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (60g) chopped walnuts
  • 4 oz (115g) low-fat cream cheese, softened
  • 2 tbsp (30ml) maple syrup
  • 1 tsp (5ml) lemon juice
  • 1 pinch (0.5g) salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan or line it with parchment paper.
  2. Grate the zucchini using the fine side of a box grater. Place the shredded zucchini in a clean kitchen towel and squeeze firmly to remove excess water.
  3. In a large mixing bowl, whisk together the unsweetened applesauce, maple syrup, eggs, and vanilla extract until smooth.
  4. Stir the squeezed zucchini into the wet mixture.
  5. Sift the oat flour, baking soda, ground cinnamon, and salt directly over the wet ingredients.
  6. Fold gently with a spatula until just combined; do not overmix. Fold in the chopped walnuts.
  7. Pour the batter into the prepared pan and bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the cake cools, prepare the frosting by mixing softened low-fat cream cheese, maple syrup, lemon juice, and a pinch of salt until smooth.
  9. Spread the cream cheese frosting evenly over the cooled cake and slice into 12 servings.
