Ingredients:
- 2 cups (220g) grated zucchini, squeezed dry
- 1/2 cup (120ml) unsweetened applesauce
- 1/2 cup (120ml) maple syrup
- 2 large eggs (100g)
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) oat flour
- 1 tsp (5g) baking soda
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 1/2 cup (60g) chopped walnuts
- 4 oz (115g) low-fat cream cheese, softened
- 2 tbsp (30ml) maple syrup
- 1 tsp (5ml) lemon juice
- 1 pinch (0.5g) salt
Instructions:
- Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan or line it with parchment paper.
- Grate the zucchini using the fine side of a box grater. Place the shredded zucchini in a clean kitchen towel and squeeze firmly to remove excess water.
- In a large mixing bowl, whisk together the unsweetened applesauce, maple syrup, eggs, and vanilla extract until smooth.
- Stir the squeezed zucchini into the wet mixture.
- Sift the oat flour, baking soda, ground cinnamon, and salt directly over the wet ingredients.
- Fold gently with a spatula until just combined; do not overmix. Fold in the chopped walnuts.
- Pour the batter into the prepared pan and bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake cools, prepare the frosting by mixing softened low-fat cream cheese, maple syrup, lemon juice, and a pinch of salt until smooth.
- Spread the cream cheese frosting evenly over the cooled cake and slice into 12 servings.
