Ingredients:
- 4 large ripe peaches, halved and pitted
- 2 tbsp melted coconut oil
- 2 tbsp honey
- 1 tsp ground cinnamon
- 1/4 tsp sea salt
- 1/4 cup rolled oats
- 2 tbsp sliced almonds
- 1 tsp vanilla extract
Instructions:
- Preheat the oven to 375°F (190°C). Slice the peaches in half, remove the pits, and place them cut-side up in a baking dish. If the peaches are unstable, slice a tiny sliver off the bottom of each half to create a flat base.
- In a small bowl, whisk together the melted coconut oil, honey, cinnamon, and salt.
- For the optional healthy crunch, stir the rolled oats, sliced almonds, and vanilla extract into the glaze mixture.
- Spoon the glaze evenly over the center of each peach half, ensuring the mixture fills the cavity left by the pit.
- Bake for 20–25 minutes until the edges of the peaches become translucent and the glaze turns a deep, mahogany-colored syrup.
