Ingredients:

  • 4 large ripe peaches, halved and pitted
  • 2 tbsp melted coconut oil
  • 2 tbsp honey
  • 1 tsp ground cinnamon
  • 1/4 tsp sea salt
  • 1/4 cup rolled oats
  • 2 tbsp sliced almonds
  • 1 tsp vanilla extract

Instructions:

  1. Preheat the oven to 375°F (190°C). Slice the peaches in half, remove the pits, and place them cut-side up in a baking dish. If the peaches are unstable, slice a tiny sliver off the bottom of each half to create a flat base.
  2. In a small bowl, whisk together the melted coconut oil, honey, cinnamon, and salt.
  3. For the optional healthy crunch, stir the rolled oats, sliced almonds, and vanilla extract into the glaze mixture.
  4. Spoon the glaze evenly over the center of each peach half, ensuring the mixture fills the cavity left by the pit.
  5. Bake for 20–25 minutes until the edges of the peaches become translucent and the glaze turns a deep, mahogany-colored syrup.
