Ingredients:

  • 1 lb lean ground beef (90/10)
  • 3 tbsp fresh ginger, minced
  • 4 cloves garlic, minced
  • 1 bunch green onions, whites and greens separated and sliced
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup beef broth
  • 1/3 cup dark brown sugar, packed
  • 1 tbsp hoisin sauce
  • 1 tsp toasted sesame oil
  • 1/2 tsp red pepper flakes
  • 1 tbsp cornstarch
  • 10 oz dried lo mein noodles

Instructions:

  1. Bring a large pot of water to a boil for the noodles.
  2. Heat a skillet over medium-high heat. Add the ground beef and spread it into an even layer. Let it sit undisturbed for 2-3 minutes to develop a mahogany crust.
  3. Break the beef into chunks and add the minced ginger, garlic, and the white parts of the green onions. Sauté for 1 minute until fragrant.
  4. In a small bowl, whisk together the soy sauce, beef broth, brown sugar, hoisin sauce, sesame oil, red pepper flakes, and cornstarch until the sugar is dissolved.
  5. Pour the sauce mixture into the skillet with the beef. Simmer until the sauce thickens and becomes glossy.
  6. Cook the noodles in the boiling water, removing them 1 minute before the package directions specify for 'al dente'.
  7. Drain the noodles and toss them directly into the skillet with the beef and sauce. Use tongs to coat the noodles thoroughly. Garnish with the green onion tops and serve immediately.
