Ingredients:

  • 2 medium zucchini, approx 7 long (500g)
  • 1 tbsp olive oil
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh parsley

Instructions:

  1. Slice each zucchini lengthwise into quarters to create long spears. Pat them thoroughly dry with paper towels to ensure a crispy texture.
  2. In a small bowl, whisk together 3 tablespoons of olive oil, minced garlic, Italian seasoning, salt, and pepper. Generously brush this mixture over all sides of the zucchini spears.
  3. Sprinkle the grated Parmesan cheese directly onto the oiled surfaces, pressing lightly so the cheese adheres.
  4. Preheat your grill to medium-high heat and lightly grease the grates with 1 tablespoon of olive oil.
  5. Place the spears across the grates. Grill for 3–5 minutes per side without moving them, until distinct mahogany-colored grill marks appear and the cheese has formed a golden crust.
  6. Remove the spears from the heat. Immediately drizzle with fresh lemon juice and garnish with chopped parsley.
