Ingredients:
- 2 medium zucchini, approx 7 long (500g)
- 1 tbsp olive oil
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried Italian seasoning
- 1/2 cup freshly grated Parmesan cheese
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 tbsp fresh lemon juice
- 1 tbsp chopped fresh parsley
Instructions:
- Slice each zucchini lengthwise into quarters to create long spears. Pat them thoroughly dry with paper towels to ensure a crispy texture.
- In a small bowl, whisk together 3 tablespoons of olive oil, minced garlic, Italian seasoning, salt, and pepper. Generously brush this mixture over all sides of the zucchini spears.
- Sprinkle the grated Parmesan cheese directly onto the oiled surfaces, pressing lightly so the cheese adheres.
- Preheat your grill to medium-high heat and lightly grease the grates with 1 tablespoon of olive oil.
- Place the spears across the grates. Grill for 3–5 minutes per side without moving them, until distinct mahogany-colored grill marks appear and the cheese has formed a golden crust.
- Remove the spears from the heat. Immediately drizzle with fresh lemon juice and garnish with chopped parsley.
