Ingredients:

  • 2 medium zucchini (approx. 1 lb / 450g), sliced into 1/2 inch rounds or long halves
  • 1 tsp (6g) kosher salt
  • 3 tbsp (45ml) extra virgin olive oil
  • 2 cloves (6g) garlic, minced finely
  • 1 tbsp (3g) fresh parsley, finely chopped
  • 1 tsp (1g) dried oregano
  • 1/2 tsp (1g) dried thyme
  • 1/4 tsp (1g) cracked black pepper
  • 1 tbsp (15ml) fresh lemon juice

Instructions:

  1. Slice zucchini into halves or rounds, sprinkle with salt, and let sit for 5 minutes.
  2. Pat the zucchini thoroughly dry with paper towels to ensure a crispy sear.
  3. In a large bowl, whisk together the olive oil, minced garlic, parsley, oregano, thyme, black pepper, and lemon juice.
  4. Toss the zucchini in the marinade until well-coated and let marinate for 10 minutes while the grill heats.
  5. Preheat grill to medium-high (approx. 400°F / 200°C).
  6. Place zucchini directly on the grates without overcrowding.
  7. Grill for 3–5 minutes per side until deep mahogany-colored grill marks appear and the center is tender but still has a slight snap.
