Ingredients:

  • 4 large peaches, halved and pitted
  • 1 tbsp olive oil
  • 1/4 tsp sea salt
  • 4 oz goat cheese, softened
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • 2 tbsp honey
  • 1 tbsp balsamic glaze
  • 2 tbsp fresh mint leaves, chiffonade
  • 1/4 cup crushed pistachios

Instructions:

  1. Slice the peaches in half and remove the pits. Using a pastry brush, lightly coat the cut side of each peach with olive oil and a pinch of sea salt.
  2. Preheat the grill to medium-high heat. Place the peaches cut-side down. Grill for 3–5 minutes without moving them until deep, mahogany-colored grill marks appear. Flip and grill for another 2 minutes to warm the skin.
  3. While the peaches are hot, place a generous dollop of the lemon-zested goat cheese in the center of each peach half. Drizzle with honey and balsamic glaze, then scatter fresh mint and pistachios over the top.
