Ingredients:
- 4 large peaches, halved and pitted
- 1 tbsp olive oil
- 1/4 tsp sea salt
- 4 oz goat cheese, softened
- 1 tsp lemon zest
- 1 tbsp fresh lemon juice
- 2 tbsp honey
- 1 tbsp balsamic glaze
- 2 tbsp fresh mint leaves, chiffonade
- 1/4 cup crushed pistachios
Instructions:
- Slice the peaches in half and remove the pits. Using a pastry brush, lightly coat the cut side of each peach with olive oil and a pinch of sea salt.
- Preheat the grill to medium-high heat. Place the peaches cut-side down. Grill for 3–5 minutes without moving them until deep, mahogany-colored grill marks appear. Flip and grill for another 2 minutes to warm the skin.
- While the peaches are hot, place a generous dollop of the lemon-zested goat cheese in the center of each peach half. Drizzle with honey and balsamic glaze, then scatter fresh mint and pistachios over the top.
