Ingredients:

  • 4 tbsp all-purpose flour
  • 2 tbsp dutch-processed cocoa powder
  • 3 tbsp granulated sugar
  • 1/4 tsp baking powder
  • 1 pinch sea salt
  • 4 tbsp whole milk
  • 2 tbsp neutral oil
  • 1/2 tsp vanilla extract
  • 2 large dark chocolate squares (approx. 70% cacao)
  • 1 tsp water

Instructions:

  1. In a small mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt until a uniform, sandy texture is achieved with no cocoa clumps.
  2. Create a well in the center of the dry ingredients and add the milk, oil, and vanilla. Whisk gently until the batter is glossy and smooth, stopping immediately once the flour streaks disappear.
  3. Divide the batter evenly between two 8-ounce microwave-safe mugs. Press one dark chocolate square into the center of each mug until submerged. Drizzle 1/2 teaspoon of water over the top of each.
  4. Microwave one mug at a time on high for approximately 60-70 seconds (depending on microwave wattage). The top should be set but slightly tacky. Let rest for 1 minute before serving.
