Ingredients:
- 2 ½ cups (320g) Gluten-Free All-Purpose Flour Blend (with xanthan gum)
- 1 tsp (5g) Baking Soda
- ½ tsp (3g) Salt
- 1 tbsp (6g) Ground Cinnamon
- ½ tsp (1g) Ground Nutmeg
- ½ cup (110g) Unsalted Butter, melted and cooled
- ¾ cup (150g) Granulated Sugar
- ½ cup (100g) Brown Sugar, packed
- 3 Large Eggs
- 1 tsp (5ml) Pure Vanilla Extract
- 2 cups (250g) Grated Zucchini, lightly squeezed
- ½ cup (60g) Chopped Walnuts
- ½ cup (90g) Semi-Sweet Chocolate Chips
Instructions:
- Preheat oven to 350°F (175°C). Grease two 8x4 inch loaf pans and line the bottoms with parchment paper.
- Grate the zucchini using the coarse side of a grater; gently squeeze with a paper towel if exceptionally watery, but keep it moist.
- In a large bowl, whisk together the gluten-free flour, baking soda, salt, cinnamon, and nutmeg until no clumps remain.
- In a separate bowl, beat the melted butter with the granulated sugar and brown sugar until smooth.
- Incorporate the eggs one at a time into the butter mixture, followed by the vanilla extract.
- Fold the wet ingredients into the dry ingredients until just combined, then gently stir in the grated zucchini, chopped walnuts, and chocolate chips.
- Divide the batter evenly between the two prepared loaf pans.
- Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Allow the loaves to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
