Ingredients:
- 1 lb ground beef (80/20 blend)
- 0.5 lb ground pork
- 6 cloves garlic, finely minced
- 0.75 cup freshly grated Parmesan cheese
- 0.5 cup sourdough crumbs
- 3 tbsp whole milk
- 1 large egg
- 0.25 cup fresh parsley and basil, finely chopped
- 1 tsp kosher salt
- 0.5 tsp cracked black pepper
Instructions:
- In a small bowl, combine the sourdough crumbs and whole milk. Let soak for at least 5 minutes until a paste (panade) forms.
- In a large stainless steel mixing bowl, combine the minced garlic, chopped herbs, and grated Parmesan cheese.
- Add the ground beef, ground pork, egg, salt, pepper, and the soaked sourdough panade to the bowl.
- Using a light folding motion, gently mix the ingredients until just combined. Do not overwork the meat to prevent toughness.
- Scoop 2 tablespoon portions and roll them lightly between your palms.
- Arrange meatballs on the prepared sheet pan and bake for 25 minutes until golden and sizzling.
