Ingredients:

  • 1 lb ground beef (80/20 blend)
  • 0.5 lb ground pork
  • 6 cloves garlic, finely minced
  • 0.75 cup freshly grated Parmesan cheese
  • 0.5 cup sourdough crumbs
  • 3 tbsp whole milk
  • 1 large egg
  • 0.25 cup fresh parsley and basil, finely chopped
  • 1 tsp kosher salt
  • 0.5 tsp cracked black pepper

Instructions:

  1. In a small bowl, combine the sourdough crumbs and whole milk. Let soak for at least 5 minutes until a paste (panade) forms.
  2. In a large stainless steel mixing bowl, combine the minced garlic, chopped herbs, and grated Parmesan cheese.
  3. Add the ground beef, ground pork, egg, salt, pepper, and the soaked sourdough panade to the bowl.
  4. Using a light folding motion, gently mix the ingredients until just combined. Do not overwork the meat to prevent toughness.
  5. Scoop 2 tablespoon portions and roll them lightly between your palms.
  6. Arrange meatballs on the prepared sheet pan and bake for 25 minutes until golden and sizzling.
