Ingredients:
- 2 cups (300g) fresh peaches, pitted and chopped
- ¾ cup (150g) granulated sugar
- ½ cup (120ml) water
- 1 tsp (5ml) vanilla extract
- 1 cup (240ml) fresh lemon juice
- 4 cups (960ml) cold filtered water
- ¼ tsp (1.5g) salt
- 1 peach, thinly sliced
- 6 sprigs (10g) fresh mint
- Fresh lemon rounds
Instructions:
- Combine the chopped peaches, sugar, and water in a saucepan over medium heat. Stir occasionally until the sugar dissolves and the peaches soften. Simmer for 10–12 minutes until the mixture looks translucent.
- Transfer the hot peach mixture to a blender and pulse until completely smooth. Pour the puree through a fine-mesh strainer into a bowl, pressing with a spoon to extract all liquid; discard the remaining solids.
- Pour the strained peach syrup into a large pitcher. Stir in the fresh lemon juice, cold filtered water, and salt until the syrup is fully integrated.
- Place the pitcher in the refrigerator for at least 30 minutes. Adjust taste with additional honey, sugar, or lemon juice if necessary before serving.
