Ingredients:

  • 2 cups (300g) fresh peaches, pitted and chopped
  • ¾ cup (150g) granulated sugar
  • ½ cup (120ml) water
  • 1 tsp (5ml) vanilla extract
  • 1 cup (240ml) fresh lemon juice
  • 4 cups (960ml) cold filtered water
  • ¼ tsp (1.5g) salt
  • 1 peach, thinly sliced
  • 6 sprigs (10g) fresh mint
  • Fresh lemon rounds

Instructions:

  1. Combine the chopped peaches, sugar, and water in a saucepan over medium heat. Stir occasionally until the sugar dissolves and the peaches soften. Simmer for 10–12 minutes until the mixture looks translucent.
  2. Transfer the hot peach mixture to a blender and pulse until completely smooth. Pour the puree through a fine-mesh strainer into a bowl, pressing with a spoon to extract all liquid; discard the remaining solids.
  3. Pour the strained peach syrup into a large pitcher. Stir in the fresh lemon juice, cold filtered water, and salt until the syrup is fully integrated.
  4. Place the pitcher in the refrigerator for at least 30 minutes. Adjust taste with additional honey, sugar, or lemon juice if necessary before serving.
