Ingredients:
- 6 cups (900g) fresh peaches, peeled and sliced
- 1/2 cup (100g) granulated sugar
- 1 tbsp (8g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) fresh lemon juice
- 1/2 cup (113g) unsalted butter, melted
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (240ml) whole milk
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, toss the sliced peaches with granulated sugar, cornstarch, cinnamon, and lemon juice. Let the mixture sit for 5-10 minutes to release the syrupy liquid.
- Pour the melted butter directly into your baking dish, swirling to coat the bottom.
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt, then stir in the milk until just combined.
- Pour the batter directly over the melted butter in the pan without stirring.
- Spoon the peach mixture evenly over the top of the batter without stirring.
- Bake for 40-45 minutes until the topping has risen to the surface, turned deep golden brown, and peach juices are bubbling around the edges.
