Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 2 tsp (10g) baking powder
  • ½ tsp (3g) salt
  • ¾ cup (175ml) vegetable oil
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • 2 tsp (10ml) vanilla extract
  • 1.5 lbs (680g) plums, pitted and sliced into wedges
  • 1 tbsp (15ml) lemon juice
  • 2 tbsp (25g) granulated sugar
  • 1 tsp (2g) ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform or round cake pan.
  2. In a large bowl, whisk together the flour, 1 cup of granulated sugar, baking powder, and salt.
  3. Create a well in the center of the dry ingredients and pour in the oil, eggs, milk, and vanilla extract. Whisk until the batter is smooth, taking care not to overmix.
  4. Pour the batter into the prepared pan and smooth the top with a spatula.
  5. Arrange the plum wedges in concentric circles, pressing them gently into the batter. Lightly brush the plums with lemon juice.
  6. Mix 2 tablespoons of granulated sugar with ground cinnamon and sprinkle the mixture evenly over the plums.
  7. Bake for 40–45 minutes, or until the edges are golden-brown and a toothpick inserted into the center comes out clean.
