Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 2 tsp (10g) baking powder
- ½ tsp (3g) salt
- ¾ cup (175ml) vegetable oil
- 2 large eggs
- 1 cup (240ml) whole milk
- 2 tsp (10ml) vanilla extract
- 1.5 lbs (680g) plums, pitted and sliced into wedges
- 1 tbsp (15ml) lemon juice
- 2 tbsp (25g) granulated sugar
- 1 tsp (2g) ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform or round cake pan.
- In a large bowl, whisk together the flour, 1 cup of granulated sugar, baking powder, and salt.
- Create a well in the center of the dry ingredients and pour in the oil, eggs, milk, and vanilla extract. Whisk until the batter is smooth, taking care not to overmix.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Arrange the plum wedges in concentric circles, pressing them gently into the batter. Lightly brush the plums with lemon juice.
- Mix 2 tablespoons of granulated sugar with ground cinnamon and sprinkle the mixture evenly over the plums.
- Bake for 40–45 minutes, or until the edges are golden-brown and a toothpick inserted into the center comes out clean.
