- 2.25 tsp instant yeast

- 4 cups all-purpose flour
- 2 tbsp extra virgin olive oil
- 1.5 tsp fine sea salt
- 1 tsp garlic powder
Instructions:
- Combine 1.5 cups warm water, 2.25 tsp instant yeast, and 1 tbsp granulated sugar in your mixer bowl. Wait for a foamy layer to appear on top to ensure your yeast is alive.
- Whisk in 2 tbsp extra virgin olive oil, 1.5 tsp fine sea salt, and 1 tsp garlic powder. Mixing the aromatics into the liquid ensures they are distributed evenly throughout the entire batch.
- Add 4 cups all purpose flour one cup at a time while mixing on low speed. Cook until the dough pulls away from the sides of the bowl.
- Turn the dough onto a floured surface and knead by hand for 5 minutes. Knead until the surface looks smooth and bounces back when poked.
- Place the dough in a greased bowl, cover with a damp cloth, and set in a warm spot.
- Preheat your oven to 475°F (245°C). Wait until the oven is fully up to temperature for at least 20 minutes.
- Punch the dough down and divide into two balls. Gently stretch each into a 12 inch circle. Stretch until the center is translucent when held to the light.
- Top as desired and bake for 10 minutes. Bake until the cheese is bubbly and the edges are charred and golden.
