Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1.5 tsp (7g) baking powder
- 0.5 tsp (3g) salt
- 0.75 cup (180ml) sour cream
- 0.5 cup (115g) unsalted butter, melted and cooled
- 2 large eggs
- 1 tsp (5ml) pure vanilla extract
- 0.25 cup (60ml) whole milk
- 3 large ripe peaches, peeled, pitted, and sliced (approx. 300g)
- 1 tbsp (8g) all-purpose flour
- 1 tbsp (15ml) lemon juice
- 1 tbsp (12g) brown sugar
- 0.5 cup (60g) powdered sugar
- 1 tbsp (15ml) milk
- 0.25 tsp (1ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease your 9-inch pan with butter and line the bottom with parchment paper.
- Whisk together the flour, sugar, baking powder, and salt in a large bowl.
- In a separate bowl, stir together the melted butter, sour cream, eggs, vanilla, and milk. Fold the wet ingredients into the dry until just combined.
- Toss sliced peaches with lemon juice and 1 tablespoon of flour.
- Spread the batter evenly into the prepared pan. Gently press the peach slices into the top of the batter and sprinkle with brown sugar.
- Bake for 45–50 minutes until a toothpick inserted into the center comes out clean. Let cool in the pan for 15 minutes before transferring to a wire rack.
- Optional: Whisk powdered sugar, milk, and vanilla extract to create a glaze and drizzle over the cooled cake.
