Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1.5 tsp (7g) baking powder
  • 0.5 tsp (3g) salt
  • 0.75 cup (180ml) sour cream
  • 0.5 cup (115g) unsalted butter, melted and cooled
  • 2 large eggs
  • 1 tsp (5ml) pure vanilla extract
  • 0.25 cup (60ml) whole milk
  • 3 large ripe peaches, peeled, pitted, and sliced (approx. 300g)
  • 1 tbsp (8g) all-purpose flour
  • 1 tbsp (15ml) lemon juice
  • 1 tbsp (12g) brown sugar
  • 0.5 cup (60g) powdered sugar
  • 1 tbsp (15ml) milk
  • 0.25 tsp (1ml) vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease your 9-inch pan with butter and line the bottom with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. In a separate bowl, stir together the melted butter, sour cream, eggs, vanilla, and milk. Fold the wet ingredients into the dry until just combined.
  4. Toss sliced peaches with lemon juice and 1 tablespoon of flour.
  5. Spread the batter evenly into the prepared pan. Gently press the peach slices into the top of the batter and sprinkle with brown sugar.
  6. Bake for 45–50 minutes until a toothpick inserted into the center comes out clean. Let cool in the pan for 15 minutes before transferring to a wire rack.
  7. Optional: Whisk powdered sugar, milk, and vanilla extract to create a glaze and drizzle over the cooled cake.
