Ingredients:
- 1 packet (28g) French Onion Soup Pack
- 2 large Yellow Onions (approx. 600g), thinly sliced
- 3 tbsp (42g) Unsalted Butter
- 4 cups (960ml) Low-sodium Beef Broth
- 1/2 cup (120ml) Dry Sherry or White Wine
- 1 tsp (5ml) Worcestershire Sauce
- 1 small French Baguette, cut into 1-inch thick rounds
- 1.5 cups (150g) Gruyère or Swiss Cheese, shredded
- 1/2 cup (50g) Freshly grated Parmesan
- Fresh Thyme sprigs for garnish
Instructions:
- Melt the butter in a large pot over medium-high heat. Add sliced fresh onions and sauté for 10-12 minutes until soft and mahogany-colored, deglazing with a tablespoon of water if they stick.
- Pour in the sherry to deglaze the pot, scraping up the browned bits. Stir in the French Onion Soup Mix, beef broth, and Worcestershire sauce.
- Bring the mixture to a boil, then reduce heat and simmer for 8-10 minutes to rehydrate the mix components and meld flavors.
- While the soup simmers, place baguette slices on a baking sheet and toast in a 400°F (200°C) oven for 3 minutes per side until crispy.
