Ingredients:

  • 1 packet (28g) French Onion Soup Pack
  • 2 large Yellow Onions (approx. 600g), thinly sliced
  • 3 tbsp (42g) Unsalted Butter
  • 4 cups (960ml) Low-sodium Beef Broth
  • 1/2 cup (120ml) Dry Sherry or White Wine
  • 1 tsp (5ml) Worcestershire Sauce
  • 1 small French Baguette, cut into 1-inch thick rounds
  • 1.5 cups (150g) Gruyère or Swiss Cheese, shredded
  • 1/2 cup (50g) Freshly grated Parmesan
  • Fresh Thyme sprigs for garnish

Instructions:

  1. Melt the butter in a large pot over medium-high heat. Add sliced fresh onions and sauté for 10-12 minutes until soft and mahogany-colored, deglazing with a tablespoon of water if they stick.
  2. Pour in the sherry to deglaze the pot, scraping up the browned bits. Stir in the French Onion Soup Mix, beef broth, and Worcestershire sauce.
  3. Bring the mixture to a boil, then reduce heat and simmer for 8-10 minutes to rehydrate the mix components and meld flavors.
  4. While the soup simmers, place baguette slices on a baking sheet and toast in a 400°F (200°C) oven for 3 minutes per side until crispy.
